Ingredients

Grilled chicken breast 180 g
Brown rice, cooked 120 g
Avocado ½ (75 g)
Mixed leaf salad 60 g
Cherry tomatoes 50 g
Olive oil 1 tbsp
Lemon juice 1 tbsp

Method

Season the chicken with salt, pepper and paprika. Grill 5–6 min per side until cooked through, then rest 3 min and slice.

Warm the brown rice and spread it across the base of a bowl.

Top with sliced chicken, avocado, salad leaves and halved cherry tomatoes.

Whisk olive oil with lemon juice, drizzle over the bowl and serve.
